A natural from Luis Jose Valdes's Finca La Cristalina near Chinchiná, Caldas, part of the Valdes family's Café Cuatro Generaciones. Cherries ferment for 18 hours, then dry for about 20 days under warm circulating air. Creamy body with grape jelly, cocoa, guava and an orange blossom finish.
