Sidra from mountaineer-turned-producer Pepe Jijón's Finca Soledad, grown under cloud forest canopy in Ecuador's Intag Valley. His Wave Washed method ferments cherries for 72 hours in sealed tanks with fluctuating temperatures before washing and slow drying in a chilled, dark room. Plum, vanilla bean and apricot with clover honey and cane sugar sweetness.
