About
In the Caparaó Mountains of western Espírito Santo, Dério Brioschi consistently produces some of Brazil’s most exceptional coffees. At Sítio dos Cedros, he pushes sweet and bright flavor dimensions to the limit — and keeps raising the bar for Brazilian coffee quality. His awards tell the story, from a municipal competition win in 2014 to a prize for Brazil’s best late-harvest coffee. About Sítio dos Cedros The farm — its name means “farm of the cedars” — sits at 1,100 meters in the Caparaó range, where cooler temperatures and Atlantic Forest conditions slow ripening. Dério leans into that. His late-harvest approach leaves the cherries on the tree longer, so they ripen further and concentrate more sugar. Then he processes them as a pulped natural: the skin comes off, but the beans dry coated in the fruit’s sweet mucilage. As a result, the cup gains intense sweetness while keeping a washed coffee’s clarity. It is a demanding way to work, and it is exactly why his coffees stand out. What’s in the Cup Caramel sweetness leads. Next, bright orange and delicate jasmine lift the cup. Finally comes the signature note: sweet corn — a distinctive profile synonymous with the region’s best coffees. Intensely sweet and complex, this lot rewards a careful pour-over, where every layer gets room to unfold. It also makes a honeyed, floral drip. For filter brewing, start with a 1:16 ratio and adjust to taste.
