Produced by the Hipp family in Honduras. 'Ultra-washed' process: depulped and fermented for 18 hours, washed and density-sorted in the water canal, then held in water tanks (anaerobic) with the water changed three times daily for five days before drying. The result is a very clean, uniform cup.
