About the farmer and farm The Gahahe washing station is located in the Gahahe area of Kayanza commune, Kayanza province, at 1805 meters above sea level. The station is equipped with 10 fermentation tanks, 4 cherry selection tables, 2 soaking tanks, and a drying field with 180 tables. It can process up to 750 tons of cherry per season. 873 smallholders deliver their harvest to Gahahe, each owning an average of 230 Red Bourbon trees. The station partners with Greenco and takes part in an IMPACT-verified livestock support project for Burundian coffee families. Processing: natural During harvest season, all coffee is selectively hand-picked, mostly by family members. As soon as cherry is delivered, it's floated in small tanks to check quality, then hand-sorted again to remove damaged, underripe, and overripe fruit. The cherries are laid in a thin layer on raised tables, turned frequently for even drying, and covered during rain, the hottest part of the day, and overnight.
