The coffee grows at 1700–1900 meters above sea level on volcanic soils, using the Caturra and Typica varieties. Processing: natural The cherries are processed using the natural method, whole fruit, without depulping. The local climate, with temperatures of 16–22°C, supports slow, even ripening of the fruit and drying of the beans after harvest.
