Mad Heads for DIU collaboration. Buying this coffee makes a direct contribution to the "Timur Special Unit" of the Defense Intelligence of Ukraine. About the farmer and farm This coffee comes from Santa Monica farm in the Quindio region of Colombia, owned by Jairo Arcila, a third-generation coffee grower. Jairo bought his first farm, Finca La Esmeralda, in 1987 and later added five more, including Santa Monica. The coffee is grown at 1450–1500 meters above sea level on volcanic soils, using the Caturra variety. Today Jairo's sons, Carlos and Felipe, help their father with picking, sorting, and processing. Both are co-founders of Cofinet. Processing: sugarcane decaf + natural Ripe cherries are hand-picked and sorted, selecting only the best, defect-free fruit. The coffee is sun-dried on raised beds under controlled temperatures until it reaches ideal moisture content. For decaffeination, the green beans go into a steam chamber to remove the silverskin, then get submerged in spring water. Once saturated, the beans move to extractors and stay in contact with sugarcane-derived ethyl acetate for 8 hours. This dissolves the caffeine, and the coffee is dried back to its original moisture level.
