Microlot from smallholders of the Sharqi Haraz Cooperative in the mountains of Eastern Haraz, grown on heirloom Yemeni cultivars. Cherries ferment anaerobically for 48 to 72 hours, then dry on raised beds for 15 to 20 days. Bold and wine-like with dark chocolate underneath.
