A community lot from the highlands of Cañaris in the province of Ferreñafe, Lambayeque, representing six small-scale growers farming at around 2000 metres. The cherries ferment 12 hours whole, then a further 48 hours after depulping before washing, giving a bright and clean cup from an unusual Peruvian terroir.
