El Martillo is one of Jose Antonio Salaverria's highest farms, at 1700 metres in the hills around the Santa Ana volcano. The cherries are depulped, soaked for 10 hours, then shade-dried on clay patios for a slow, even dry, giving a clean, balanced and elegant cup.
