An anaerobic natural from the Shoondhisa sub-kebele in Suke Quto, Shakiso, Guji, dried at Sookoo Coffee's Suke station. Cherries rest 72 hours in sealed containers, then dry about 25 days on raised beds. Sweet and wine-like with blueberry, cranberry and apricot.
