Grown by farmers across Minas Gerais and sorted by size and quality before decaffeination. Caffeine is removed with ethyl acetate derived from sugar cane: the beans are steamed to open their pores, soaked and washed in the solution, steamed again to strip the solvent, then dried and graded.
