Huai Chomphu, the "Pink Valley", is home to around 500 coffee-growing households. Produced by Stidkhun Wuiyaku with Beanspire: cherries are hand sorted and floated, fermented anaerobically in sealed bags for six days, then pulped with the mucilage intact and dried on raised beds for 25 days.
