Washed Ethiopian from the Danche washing station in the Worka Chelbessa area of Gedeb, run by Neguesse Debela and family. A 36 to 48 hour underwater fermentation and 10 to 14 days on raised beds give a crisp, balanced cup with lemon-lime, honeysuckle, and blueberry pie.
