Passion fruit co-ferment. 24-hour pre-fermentation in bags and 24 hours in cherry, then depulped and fermented anaerobically for 5 days with its mucilage, yeast and passion fruit. Mechanically dried 10 days. Roasted light; the roaster recommends it as cold brew.
