Natural fermented Gesha micro-lot from Derek Unruh at Ponderosa Coffee Estate, on the slopes of the Barú Volcano. Hand-selected cherries oxidise for about 48 hours in stainless steel tanks, then dry on raised beds and finish in a humidity-controlled dark room. Graded 90 points. Omni-roasted in Boquete by Francisco Serracín, for filter through espresso.
