A field blend of Caturra and Pache Verde from Santos Pablo Ramirez's 0.7 hectare plot on Finca Paya, milled through the El Sendero co-operative in Huehuetenango. In the cup it recalls white peony tea: sweet, soft and delicate, with apricot syrup and green melon and no strong acidity.
