In Tanzania, the large majority of coffee farmers are smallholders. In order to pool resources and centralize cherry processing, many of them join together to create Agricultural Marketing Cooperative Societies (AMCOS). Mbilidino AMCOS serves 378 producers in the Songwe region. Its name is an amalgamation of the cooperative members' villages: Idiwili, Mbulamsege, Ilindi, and Nonde. The farmers grow their cherries, which are mostly Bourbon derivates, in clay loam. After harvest, they deliver them to the Mbilidino processing center where the cherries are pulped and the resulting parchment is meticulously graded via washing channels. After fermenting for 12-24 hours, the parchment is washed and soaked a second time, then sun-dried for 8-14 days on tables. Songwe Mbilidino is fragrant with a balanced sweetness. It opens with a smooth dark chocolate taste, which is followed by notes of brown sugar and delicate bergamot.
