Washed Gesha from Jamison Savage's Iris Estate in the high cloud forests of Volcán. Cherries above 21 Brix were depulped and shade-dried on raised beds for more than ten days, then rested in parchment for up to 90 days before milling. Clementine, grape and elderberry with balanced acidity, with sweet cream and butterscotch as it cools.
