Advanced washed. Cherries were floated, washed in 50°C water, depulped with some mucilage left as fuel, then sealed in anaerobic tanks with a defined inoculant. Jhon tracked Brix, pH, TDS and conductivity through the ferment, then arrested it with a 35°C wash before 8 to 12 days of sun drying.
