About
Bourbon grown at El Ingenio in the Apaneca Ilamatepec range of El Salvador by the Urrutia family. Cherries run through four depulping lines calibrated by ripeness at the San Antonio wet mill, then dry-ferment 13 to 14 hours, get washed, rest in a wet fermentation tank, and dry on guardiolas and brick patios. Dried fruits, green apple and fudge with a smooth, round mouthfeel.
