A naturally processed Colombia variety from Finca Potosí at Café Granja La Esperanza, revived and re-developed with the farm exclusively for Manhattan. The cherries ferment under control for 15 hours, then dry in a dehumidifier for a further 72 hours. Candy apple, plum and hibiscus with the juicy Sweet Valley profile.
