Caturra from the Cauca highlands, produced by biochemical engineer turned coffee producer Andrés Martínez Guerrero. Density-sorted ripe cherries get a 48-hour whole-cherry fermentation, inoculation with selected beer yeast and microbial cultures, depulping, a further 24-hour fermentation, and 12 to 18 days of staged drying on raised beds.
