About
We specifically asked for this one. Tart Pom Ethiopia was a barista and customer favorite back in 2023, so when this year’s lot came around, we booked it based on memory and gave the sample a very happy yes. Somehow, it got even better: cleaner, more expressive, and loaded with lovely fruit. It was harvested in February, processed in March, hit the water in May, and landed in Milwaukee in August. Then we gave it a little rest while we tinkered with the roast. We’re keeping it light to let that tart acidity do its thing, with enough development to bring the sweetness into balance.
