A washed Typica separation from Maria Clavelita, a second-generation grower in the remote village of Santo Domingo Cacalotepec in Oaxaca. Cherries had a 12-hour whole-cherry fermentation, then 38 hours after depulping, before drying for 8 to 10 days on patios and rooftop terraces.
