A 72 hour mixed fermentation of coffee with pineapple, blackberry and strawberry, microorganisms and oils in a bioreactor under restricted oxygen. Finca Milán, in the village of Betulia near Pereira, has produced coffee since 1982 and is where Café Uba develops its Culturing and Nitro fermentations. Three generations of one family look after every step, from the trees to the fermentation tank.
