About
Backslopping: freshly depulped Caturra goes into the bioreactor still holding the active medium from a previous Culturing run, so the earlier fermentation's microbes and aromatics carry over. Finca Milán, in the village of Betulia near Pereira, has produced coffee since 1982 and is where Café Uba develops its Culturing and Nitro fermentations. Three generations of one family look after every step, from the trees to the fermentation tank.
