About
Chiroso varietal, from Urrao, Antioquia, Colombia, grown at 2100 masl. Processing: Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. Transported by horse to the main road, then by car to the house and mill. De-pulped. Fermented underwater in stainless steel tanks using the cochadas method, where coffee is added to the fermentation tank throughout the week and then washed together on Monday. Dried until moisture content reaches 10.5%.
